I’ll admit I love a good meal prep. Since the beginning of this year, I have slacked a lot on my meal prep game but this new easy paleo Asian chopped salad recipe is a game changer.
The new recipe I recently created is super easy and quick to make. It is my take on an Asian inspired chopped salad. It only has five ingredients but it’s insanely delicious. The star of this recipe is the Trader Joe’s Cruificer Crunch Salad mix. It feels like a mix between a chopped salad and a slaw. Keep reading for my recipe and ingredient grocery list.
All ingredients can be found at Trader Joes (except the Golgi Berries which I have linked) or substituted for similar items at other stores.
Ingredients:
– Trader Joes Crucifier Crunch (a mix of Shredded Kale, Cabbage, and Brussel Sprouts)
– Shredded Chicken ( I make mine in the Slow cooker on Sunday for the week ahead)
**Optional Dressing: Trader Joes Sesame Ginger Balsamic Dressing

Start first with the dressing at the bottom. Next, you place the salad greens followed by your protein of choice. To finish, you top it off with your “crunchies” (the nuts and dried fruit).
